To make them, start by toasting pecan halves in the oven at 350°F (175°C) for 8–10 minutes. While they cool, melt 12 oz of soft caramels using short bursts in the microwave or over low heat on the stove.
On a parchment-lined tray, arrange 3–4 pecans like a turtle shape. Spoon melted caramel over each cluster, then let them sit for 10–15 minutes. Next, melt 8 oz of semi-sweet chocolate and gently spread a spoonful over each cluster to cover.
Let the candies set at room temperature for about an hour or chill them for 20–30 minutes. Store in an airtight container for up to 1 week at room temp or 2 weeks in the fridge. Optional: sprinkle a pinch of sea salt on top before the chocolate sets for a sweet-salty twist!
